2025 Someday Never Comes (Approachable Red)
We wanted to make a red wine that was delicious, vibrant and structured but also super versatile and very approachable. We also wanted to be affordable. This wine punches well above it’s price point.
Someday Never Comes is 100% Sangiovese from the Chalmers vineyard on the rocky slopes of Mt Camel. The soils are ancient Cambrian volcanic and are comprised of dolerite, green jasper and ironstone to name a few.
I first used this fruit in 2022 and made one small tank of it. That tank ended up in the 2022 True Love Waits. I so was enamoured with that single tank of Sangiovese then that I knew I had to make a single varietal wine from it sometime in the future.
The soils here work so well for these red Italian varietals, The wines always have such a volcanic, mineral drive with super fine tannins which create incredible structure.
This wine drinks more like a pinot than Sangiovese. It’s got fruit upfront but is predominantly savoury in charcter, cranberry and blackberry notes then the acid line and tannin profile really shine through. It was intentionally a low extraction ferment to keep it on the lighter, more playful side. It was aged in 90% stainless and 10% very old barrel.

This one needs no introduction !
The 2025 version builds on the 2023 & 2024 in the trajectory towards refinement. Still the wine you love, maybe slightly fresher this year still with all of those lovey aromatics that has made this wine a cult classic.
Moscato Giallo & Vermentino grown by the Chalmers family on the slopes of Mt Camel in Heathcote, Victoria and a small portion from their Merbein vineyard further north. It was a great season and fruit this year was of a very high quality when it came off the vine which has resulted in a very well balanced wine.
Long steady ferments in 100% stainless, approximately 12 days on skins, pressed, aged in stainless. Racked only once prior to bottling.
An expressive whack of florals on the nose, perfumed stone fruits, musk and spring blossoms. The palate being pretty much the antithesis of this. Fresh and pure with a cool slated steeliness and a fine salinity to keep it all together. All at a refreshingly low alcohol of 10.5% !
The reason this wine is so reasonably priced has nothing to do with quality or how much care and detail goes into making it. It is the fact alone that we wanted to have an entry level wine that people could afford to consume. This is important. Especially in these times.. Wine for the people !
